This week, Ham’s fave – KWAY CHAP! Denise needs a little more convincing, but if you’re a kway chap lover, share your place of choice!For the unitiated, Kuay Chap (粿汁 guo zhī) is a Teochew dish of flat, broad rice sheets in a soup made with dark soy sauce, served with pig innards, braised duck meat, various kinds of beancurd, preserved salted vegetables, and braised hard-boiled eggs.

  • Dunman Duck Rice…best kuay chap Duman Hawker Centre basement. The kuay is smooth, broth is tasty with hint of herbs. The inards, delicious, what’s suppose to be crunchy or soft is perfectly done. The braised duck is also a must try with the gravy thick but not overbearing….yum yum. Chilli 2 types..dry & wet..your preference. Enjoy. Ang Hock Heng.

  • THIS WEEK’S WINNER! blanco court kuay chap at buona vista market. The organs are stewed nice and soft in a light savoury sauce which is very much less salty compared to those at other stalls. But what is really great about the place is that you can choose your own mix of your favourite parts and the owner will accomodate to it. And finally the soup base for the kuay is the stewing sauce, direct from the pot- much better and cleaner than those from stalls which dilute their overly salty stew into the water used cook the kuay.       Tried the Old Bugis Kway Chap in Sengkang Market. Love the sauce & cleaned intestines. Chilli sauce is good too. I would say is the best around the few neighbouring estates..

      I came across a couple of very good kway chap stalls in Johor Bahru. It is called kway teow kia over there as they use kway teow instead of “kway”. The braised pork and innards at these stalls are really tasty.
